Alaskan Salmon with Lemon Vinaigrette

The beautiful state of Alaska in known for many things including their beautiful scenery and freezing temperatures.  But the most popular of all is the Alaskan Salmon, their prized state fish famed the world over.  Here is a healthy recipe you may enjoy to your heart’s content!

Serves  4


  • 4 Alaskan salmon fillets or steaks, 6 to 8-ounces each
  • 1 cup juice of Lemons
  • 1 1/2 tablespoons red onion, minced
  • 1 1/2 tablespoons lime juice
  • 1 teaspoon Honey-Dijon mustard
  • 1 teaspoon chili powder
  • 1/2 cup fat-free Italian salad dressing
  • 4 teaspoons fresh cilantro, chopped
  • 1 tablespoon olive oil
  • Salt and pepper, to taste


For the Sauce:

  • Pour the lemon juice in a small saucepan over medium-high heat until it is reduced to the consistency of syrup, (makes about 1/4 cup); let cool slightly.
  • Along with the cooled syrup, put lime juice, onion, chili and mustard in a blender.  Blend for about 30 seconds.  While running the blender, slowly pour the salad dressing so that the consistency will thicken.

For the Salmon:

  • Preheat the oven to 400 degrees F
  • Lightly season the salmon fillets with salt and pepper.
  • Heat an oven-safe pan for 2 minutes, and add 1 tablespoon of olive oil.
  • Sear the salmon fillets on 1 side for about 2 minutes and turn over to sear other side.
  • Place the pan inside the oven and bake for about 6 to 8 minutes, or until fish flakes easily when poked with a fork.
  • Serve with the Lemon Vinaigrette Sauce and garnish with chopped cilantro
