Baked Chilean Sea Bass with Herbs

Chilean Sea Bass is one of the most popular fish dishes around and rightly so!  As proof of its fabulous reputation, caterers always serve the dish during weddings and big events.  Below is a simple yet delicious recipe for Chilean Sea Bass that anyone can do.

Serves 4


  • 4 8-ounce sea bass fillets
  • 3 garlic cloves
  • 4 fresh whole tomatoes
  • 4 ounces feta cheese, divided
  • 1 juice of lemon
  • 2 ounces dry white wine, divided
  • 5 tablespoons extra virgin olive oil
  • 1 tablespoon dried oregano
  • 2 tablespoons fresh basil, chopped
  • 2 tablespoons unsalted butter
  • Salt and pepper


  • Marinate your fish with salt and pepper. Set aside for about 30 minutes.
  • Sautee the garlic in olive oil.
  • Add your fish then cook it until golden brown.  Turn it over and cook the other side for even cooking.
  • When both sides are golden brown, transfer the fish to an oiled baking dish and add the tomatoes, fresh basil, oregano, 2 ounces of feta cheese, white wine and the lemon juice.
  • Pre-heat your oven to 400 degrees.
  • Bake in oven for 12 to 15 minutes.
  • After baking, garnish the dish with the remaining feta cheese and splash a bit of wine on it.


Voila! Now you have a dish worthy of even the grandest wedding!

Cooking Time: +/- 30 minutes

Tips for cooking:  It is highly recommended that you pair this dish with Orzo pasta or Saffron Rice.
