Deep-fried Creole Crappie Fillets

They say the Crappie fish is the best tasting fresh water game fish around.  If you think otherwise, then do try this delicious way of cooking your Crappie fish and you will surely agree!  Although Crappie fish are tasty any way you cook them, this recipe gives it a Southern touch by using Creole style seasoning.

Serves 4.


  • 1 lb Crappie Fillets
  • 2 cups yellow enriched cornmeal
  • ½ cup self rising flour
  • 2 teaspoons Cayenne pepper
  • Salt
  • Water
  • Canola oil

For the Creole Seasoning:

  • 2 tablespoons onion powder
  • 2 tablespoons garlic powder
  • 2 tablespoons dried oregano leaves
  • 2 tablespoons dried sweet basil
  • 1 tablespoon dried thyme leaves
  • 1 tablespoon black pepper
  • 1 tablespoon white pepper
  • 1 tablespoon cayenne pepper
  • 1 tablespoon celery seed
  • 5 tablespoons sweet paprika


  • Mix all the ingredients for your Creole seasoning in a large mixing bowl.
  • Mix the Creole seasoning mix, cornmeal, flour, Cayenne pepper, and salt in a large sealable bowl with a lid.
  • Shake all your ingredients together until you are sure they are mixed together well.
  • Clean the crappie fillets with water
  • Cut them into desired sizes
  • Add your Crappie fillets into the mixing bowl and put the lid back on.  Shake the bowl again and make sure that the Crappie fillets are well covered with seasoning and batter.
  • Heat the oil in a pan and drop in your seasoned fillets.
  • Cook until golden brown, then transfer onto paper towels to remove excess oil.

You serve this delicious dish with lemon wedges and cold iced tea!
