Redfish with Spices

Redfish together with all the best spices will make you ask for more! This fresh, spicy and mouth-watering recipe tastes great with either white or red wine. A great recipe for a dinner party!

Serves 4


  • 1 tsp dried thyme
  • 1 tsp ground red pepper
  • 1 tsp dried marjoram
  • 1 tsp coarsely cracked black pepper
  • 1 tsp paprika
  • 1 tsp coarse salt
  • 1 tsp ground garlic
  • 1 tsp dry parsley
  • 4 medium redfish fillets
  • 1/2 cup butter, clarified


  • In a bowl, pour in spices.
  • Place a large cast-iron skillet over high heat. When the skillet’s color begins to lighten, about 5 to 10 minutes, the pan is ready.
  • Brush the whole fish with butter and then dip in spices.
  • Put in the pan and pour a little of the melted butter over each fish.
  •  Cook for 3 minutes.
  • Turn the fish to its other side, and pour a little more butter over it. Cook 3-6 minutes, or until done.
