Barbecue Snook with Lemon Sauce

Snook is one of the best fishes to use in cooking. Its flavor becomes so unforgettable you will crave for more. When cooked fresh, it is even better! Barbecue Snook is perfect for seafood lovers. Whether you’re at the park or at the beach, Barbecue Snook is just perfect for you!

Ingredients:

  • 1 whole snook, cleaned
  • 3 bay leafs
  • 1 sliced clove of garlic
  • 4 slices of lemon
  • ½ cup olive oil (extra virgin is best )
  • Salt and pepper to taste

Serves 4

Directions:

  • Cut four slits in each side of the fish.
  • Place a bay leaf, a ½ lemon slice and some of the sliced garlic in each of the four slits.
  • Salt the fish. Drizzle the fish with lemon juice and olive oil.
  • Set aside for about 1 hour before inserting a barbeque stick into it.
  • While cooking, brush on a mixture made of the remaining garlic, oil and lemon juice.
  • You can choose to add a sprig of fresh rosemary, oregano or basil for garnish.
  • While the fish is being grilled, pour some of the olive oil to keep its skin moist.
  • Saute the remaining sliced garlic clove with white wine and parsley for 3 to 4 minutes.
  • Remove from heat and squeeze the juice of a single lemon. Serve this sauce COLD with the hot fish.

Note:  For an extra treat, serve with a salad. A perfect way to enjoy the outdoors! Use a charcoal or wood fired kettle. Gas grills will NOT do it for this one.
