Tuna Chowder with Cheddar Cheese

This recipe is not only creamy and mouth watering but it is healthy too! Canned tuna is a prominent component in many weight trainers’ diets, because it is high in protein and easy to prepare. Tuna is an oily fish, meaning it contains a high amount of Vitamin D. This tuna chowder is made more delicious with cheddar cheese and corn.

Serves 6

Ingredients:

  • 2 cups water
  • 1/2 tsp salt
  • 2 peeled and sliced medium potatoes
  • 1/2 cup diced carrot
  • 1/2 cup chopped celery
  • 1/4 cup butter
  • 1/4 cup flour
  • 2 cups milk
  • 3 cups shredded sharp Cheddar cheese (about 12 ounces)
  • 1 can (7 ounces) drained and flaked tuna
  • 1 can (8 ounces) cream-style corn
  • Few drops Tabasco sauce
  • Chopped green onions or parsley for garnish

Directions:

  • In a large saucepan, pour water and 1 teaspoon of salt. Add the diced potato, carrot, celery, chopped onion. Cover and boil.
  • Reduce heat and simmer for about 10 minutes; remove from heat and put aside.
  • Melt butter in another pot. Pour in flour and stir until smooth. Slowly add milk and stir constantly. Do not stop cooking, stirring until it is smooth and thickened. Add cheese and stir until it is melted. Put in cooked vegetables, tuna, corn, and just a few drops of Tabasco sauce to add a little spice. Add salt to taste.
  •  Serve tuna chowder with green onions or parsley for garnish, if desired.
