Fried Perch Cakes French Style
This wonderful North American fish gets a French makeover with this delicious and easy recipe.
Serves 4-6
Ingredients:
- 1 1/2 to 2 pounds perch fillets
- 5 slices white stale bread, chopped into squares
- 1 teaspoon baking powder
- 2 raw eggs
- 2 tablespoons mayonnaise
- 1 bunch parsley, chopped fine
- 3 tablespoons Old Bay seasoning (check out the note below on how you can you’re your own seasoning!)
- 1/2 teaspoon Worcestershire sauce
- Salt and pepper to taste
- Bread crumbs to coat cakes
Directions:
- Put the perch fillets in an oven toaster and cook for about 10 minutes or until the color changes. You may also put it in the microwave for 5 minutes.
- When fillets are cooked, chop them into tiny bits
- Mix the stale bread squares, baking powder, eggs, mayonnaise, parsley, Old Bay seasoning, Worcestershire sauce, salt and pepper.
- Add in the chopped fillets and continue mixing thoroughly.
- Now take a small handful of the mixture and shape into cakes. Continue shaping all the mixture into cakes.
- After shaping them into cakes, pat them with breadcrumbs. Coat all over.
- Fry in oil until crispy.
Note: Can’t find any Old Bay seasoning? No problem! You can make your own. Here’s how:
Ingredients:
- 1 tablespoon ground bay leaves
- 2 teaspoons celery salt
- 1-1/2 teaspoons dry mustard
- 1 teaspoon ground black pepper
- 1 teaspoon sweet or smoked paprika
- 1/2 teaspoon ground celery seeds
- 1/2 teaspoon ground white pepper
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground allspice
- 1/4 teaspoon ground cloves
- 1/4 teaspoon crushed red pepper flakes
- 1/8 teaspoon ground mace
- 1/8 teaspoon ground cardamom
Just mix all of these ingredients and store in an airtight container.
